Bihar's soul on a plate — round balls of whole-wheat dough stuffed with roasted gram flour (sattu), spiked with mustard oil, ajwain, garlic, ginger, green chillies and pickle masala. Slow-roasted over cow-dung cakes or charcoal till smoky and crisp, then dunked generously in pure ghee and served with chokha — a smoky mash of fire-roasted brinjal, potato and tomato tempered with mustard oil, raw onion and coriander.
Litti's story stretches back over 2,000 years to the Magadh empire. Travel-friendly and long-lasting, it sustained the soldiers of Chandragupta Maurya on long marches and is said to have fuelled the armies of Sher Shah Suri across the Grand Trunk Road. During the 1857 uprising, Bihari and Awadhi sepoys carried sattu-stuffed littis as instant field rations — no water, no fire needed to keep them fresh for days.
From village chulhas to PM Narendra Modi's plate, litti chokha today is Bihar's most-loved culinary export — humble, rustic and unmistakably Magadhi. Best eaten hot, with extra ghee, raw onion and a wedge of lime.
